Pancakes:
Mix dry ingredients in large bowl.
1-1/2 cup Flour
3-1/2 teaspoons Baking Powder
1 teaspoon Salt
1 tablespoon Sugar

Mix together wet ingredients (don't let the melted butter cook the egg).
1-1/4 cup Milk
1 Egg
3 tablespoons melted Earth Balance (butter)

Combine wet and dry, but don't over mix...slightly lumpy is good.
Cook as usual.



Mixed Berry Pie:
Oven:  425

Pie Crust: 9 inch Fresh or Frozen...doesn't matter.

2 cups frozen Mixed Berries, thawed and lightly drained...a little juice is good.  Add from 1/8 to 1/2 teaspoon Almond Extract...it's personal.  Stir well.

1/4 cup Sugar mixed well with 3 tablespoons Cornstarch.  Add to berry mixture and stir well.

Spoon into pie crust and add top crust or crumble or whatever you like.  Bake about 40 minutes or until crust is perfect!
